Series summary:
The "Medicine on a global scale" series of interviews brings together researchers from a variety of backgrounds to highlight current work on the global history of medicine and health, from the 15th century to the present day. By combining different points of view, it opens a window onto the questions, perspectives and debates that are currently driving this dynamic field of research, which is itself globalised. In order to provide access to as wide a readership as possible, all interviews are published in French and English.

On the history of medicine and diet in China
Angela Ki Che Leung is Professor Emerita at the University of Hong Kong. She is a historian specialising in culture, health and food in East Asia, particularly in China. Her research focuses on topics such as the history of charitable organisations in imperial China, and the role of disease in Chinese society during the late imperial, modern and contemporary periods. She has published numerous works in English, Chinese and French, including *Leprosy in China: A History*, and *Crafting Everyday Food: Technology, Tradition, and Transformation in Modern East Asia*, co-edited with Hallam Stevens. She is currently working on a book about the history of the production and consumption of soya sauce in China.

Anicet Zran is a senior lecturer in history at Alassane Ouattara University in Bouaké, Côte d’Ivoire. His research focuses on the history of health, HIV/AIDS and humanitarian action in West Africa. He is also a member of the scientific advisory board of the French Red Cross Foundation.
